  • ⅓ cup granulated sugar
  • ½ cup brown sugar
  • ⅓ cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch of allspice
  • ¼ teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch square baking dish.
  2. In a pan, boil the apple cider until reduced by half (about 5 minutes). Measure out ¾ cup and mix in diced butter until melted.
  3. Whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt in a bowl.
  4. Gradually mix the reduced cider into the wet ingredients.
  5. Gently fold in the flour until just combined.
  6. Pour batter into the prepared dish and bake for 22-25 minutes until golden brown.
  7. Let cool for 5 minutes before adding toppings: melt butter on top and sprinkle with sugar-cinnamon mixture.
