  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened (for buttercream)
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider (for buttercream)
  • 1 tsp vanilla extract (for buttercream)
  • Pinch of salt (for buttercream)
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, beat softened butter and brown sugar until fluffy. Add egg and vanilla.
  4. Mix in cooled apple cider reduction alternately with dry ingredients and milk.
  5. Scoop tablespoon-sized rounds onto prepared sheets and bake for 10-12 minutes until firm; cool completely.
  6. For the buttercream: Beat softened butter then gradually add powdered sugar, reduced cider, vanilla, and salt until smooth.
  7. Assemble whoopie pies by spreading buttercream on one half and adding caramel before topping with another half.
