  • 2 1/2 tablespoons sour cream
  • 1 large egg
  • 1 1/4 teaspoons vanilla extract
  • 1/2 cup of apples (diced into small pieces)
  • 1 1/4 cups flour (for batter)
  • 1/2 cup of sugar (for batter)
  • 3/4 teaspoon baking powder (for batter)
  • 1/2 teaspoon salt (for batter)
  • 1 1/4 teaspoons cinnamon (for batter)

Instructions

  1. Preheat your oven to 400°F (200°C) and line your muffin tins.
  2. In a small bowl, mix flour, cold butter, white sugar, brown sugar, cinnamon, and salt for the topping until crumbly.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and cinnamon for the batter.
  4. In a large bowl, combine milk, softened butter, sour cream, egg, and vanilla extract.
  5. Gradually add dry ingredients to wet ingredients until just combined. Fold in diced apples.
  6. Fill muffin tins nearly to the top with batter and sprinkle crumble topping generously.
  7. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
