  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper. Mix well to create a creamy filling.
  2. Lay an eggroll wrapper on a clean surface and place about 2 tablespoons of the filling diagonally at the center. Fold bottom corner over the filling, then fold in sides and roll tightly to seal.
  3. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  4. Carefully fry the eggrolls seam side down in batches for 3-4 minutes until golden brown and crispy.
  5. Drain on paper towels before serving with your favorite dipping sauce.
