  • 4 cups chicken broth
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • ¼ cup chopped parsley
  • 1 cup mozzarella cheese (cubed)
  • 2 cups bread crumbs
  • 2 eggs
  • Olive oil for brushing

Instructions

  1. Cook Arborio rice in chicken broth until al dente; allow to cool.
  2. Combine cooled rice, Parmesan cheese, salt, pepper, and parsley in a bowl.
  3. Shape rice mixture around mozzarella cubes into balls.
  4. Dip each ball in beaten eggs, then roll in bread crumbs.
  5. Preheat oven to 375°F (190°C). Place arancini on a parchment-lined baking sheet and brush with olive oil.
  6. Bake for 20-25 minutes until golden brown.
