- 4 cups chicken broth
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- ¼ cup chopped parsley
- 1 cup mozzarella cheese (cubed)
- 2 cups bread crumbs
- 2 eggs
- Olive oil for brushing
- Cook Arborio rice in chicken broth until al dente; allow to cool.
- Combine cooled rice, Parmesan cheese, salt, pepper, and parsley in a bowl.
- Shape rice mixture around mozzarella cubes into balls.
- Dip each ball in beaten eggs, then roll in bread crumbs.
