  • 2 large chicken breasts
  • 4 ounces of cream cheese
  • 3/4 cup of heavy cream
  • 4 cloves of garlic
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of paprika
  • 1 teaspoon of Italian seasoning
  • 1/4 cup of Parmesan cheese
  • 3/4 cup of mozzarella cheese
  • 8 ounces of sun-dried tomatoes
  • 3/4 cup of fresh spinach
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts in half lengthwise and season with salt and pepper; place in a baking dish.
  3. In a bowl, mix softened cream cheese with heavy cream until smooth. Stir in minced garlic, onion powder, paprika, Italian seasoning, salt, pepper, parmesan, and half of the mozzarella.
  4. Spread the cream mixture over the chicken and top with chopped sun-dried tomatoes.
  5. Cover loosely with foil and bake for 20 minutes.
  6. Uncover, stir in spinach, and top with remaining mozzarella; bake uncovered for an additional 10 minutes until bubbly.
