  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts into thin fillets and lay them in a baking dish, seasoning with salt, pepper, and half of the minced garlic.
  3. In a bowl, mix softened cream cheese with heavy cream until smooth; add remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half of mozzarella cheese.
  4. Spread the sauce over the chicken and scatter chopped sun-dried tomatoes on top.
  5. Cover with foil and bake for 20 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. Stir in chopped spinach, sprinkle remaining mozzarella on top, and bake uncovered for another 10 minutes until bubbly.
