  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium-sized)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallow bits, divided

Instructions

  1. Preheat oven to 400°F (200°C) and prepare muffin pan with liners or nonstick spray.
  2. In a large bowl, mix melted butter and brown sugar until combined. Add egg, vanilla extract, mashed banana, and sour cream; blend well.
  3. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually add dry ingredients to wet mixture alternately with milk; mix until just combined.
  5. Gently fold in chocolate chips and vegan marshmallow bits.
  6. Fill muffin liners about three-quarters full; sprinkle remaining toppings on top.
  7. Bake for approximately 16 minutes or until golden brown and toothpick comes out clean.
  8. Let cool in the pan for a few minutes before transferring to wire rack.
