  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 2 cups panko breadcrumbs
  • Canola oil (for frying)
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha
  • 2 tablespoons honey

Instructions

  1. Prepare the sauce by mixing mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a bowl; set aside.
  2. Marinate the chicken in buttermilk for at least 15 minutes.
  3. Create a breading station with flour mixed with seasonings in one dish, beaten egg with Sriracha in another, and panko breadcrumbs in a third.
  4. Coat each piece of marinated chicken by dipping it into the flour mixture, then the egg mixture, and finally the panko breadcrumbs.
  5. Heat canola oil in a skillet over medium heat (about 350°F) and fry the coated chicken until golden brown (3-4 minutes per side).
  6. Drain excess oil on paper towels and serve hot drizzled with bang bang sauce.
