  • 2/3 cup vegetable oil

  • 1 cup sour cream
  • 3/4 cup cocoa powder (Dutch processed)
  • 3/4 cup boiling water
  • 300g dark chocolate (for frosting)
  • 8 oz cream cheese (room temperature)
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 2/3 cup light brown sugar
  • 1 tsp salt
  • 1/3 cup buttermilk (mix 1/3 cup whole milk + 1 tsp vinegar)
  • 2 tsp instant coffee
  • 3 tbsp corn syrup
  • 1/3 cup cocoa powder for frosting (33g)
  • 1 cup powdered sugar (100g)
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream (chilled)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix eggs, vegetable oil, buttermilk mixture (whole milk + vinegar), and sour cream until smooth.
  4. Pour wet ingredients into dry ingredients and fold gently until just combined.
  5. Stir in boiling water until fully mixed.
  6. Divide batter into two greased round cake pans and bake for about 30 minutes or until a toothpick comes out clean.
  7. While cakes cool, melt dark chocolate with corn syrup over low heat for the frosting. Beat cream cheese until fluffy and mix in cocoa powder and powdered sugar gradually.
  8. Once cakes are completely cooled, frost between the layers and around the top.
