  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 3 tbsp corn syrup
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, sugars, cocoa powder, and salt.
  3. In another bowl, beat eggs, oil, buttermilk mixture, sour cream, and instant coffee until smooth.
  4. Gradually mix wet ingredients into dry ingredients until just combined. Stir in boiling water gently.
  5. Divide batter evenly between prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Cool cakes for about 10 minutes before transferring to wire racks.
  7. For frosting, melt dark chocolate with corn syrup; mix with cream cheese until smooth. Fold in whipped heavy cream gently.
  8. Frost cooled cake layers generously.
