  • 2 sheets of puff pastry
  • 2 tablespoons honey
  • 100 grams blue cheese, crumbled
  • 100 grams grated Parmesan cheese
  • 50 grams walnuts, chopped
  • 68 sprigs fresh thyme leaves
  • 1 tablespoon milk
  • Sea salt and cracked pepper

Instructions

  1. Preheat your oven to 180C (350F). For non-fan forced ovens, set to 200C (390F).
  2. Drizzle honey over each sheet of puff pastry evenly.
  3. Spread chopped walnuts, crumbled blue cheese, grated Parmesan cheese, and fresh thyme leaves on top. Season with sea salt and cracked pepper.
  4. Roll up each pastry sheet tightly from one edge and cut in half lengthwise.
  5. Twist each piece into a coil shape on baking paper.
  6. Brush with milk and place in the preheated oven.
  7. Bake for 25-30 minutes until golden brown and puffed up.
  8. Serve warm with extra thyme for garnish.
