Ingredients

Scale
  • 4 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 packet (7g) instant yeast
  • ½ teaspoon salt
  • ½ cup whole milk, warmed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 cups whole milk (for cream filling)
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 teaspoons vanilla extract
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a large bowl, mix flour, sugar, yeast, and salt. In another bowl, whisk together warmed milk, eggs, and melted butter. Gradually combine wet mixture into dry ingredients until a dough forms. Knead until smooth.
  2. Cover the dough with a cloth and let it rise in a warm place until it doubles in size (about 1 hour).
  3. For the pastry cream: In a saucepan, heat whole milk and sugar until simmering. Mix egg yolks and cornstarch in another bowl; slowly whisk hot milk into this mixture. Return to the stove until thickened; stir in vanilla extract and butter.
  4. Punch down the risen dough and roll it out on a floured surface; cut out circles with a cookie cutter or glass. Let them rest briefly.
  5. Heat vegetable oil in a deep pot over medium heat; fry doughnuts until golden brown on both sides.
  6. Once cooled slightly, fill each bombolone with pastry cream using a piping bag.
  7. Dust generously with powdered sugar before serving.
