  • ¾ cup peach preserves
  • ¼ cup apple juice
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 4 salmon fillets (about pounds)
  • 2 medium peaches (pitted, thinly sliced)

Instructions

  1. Prepare the marinade: In a bowl, mix peach preserves, apple juice, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes.
  2. Marinate the salmon: Place salmon fillets in a resealable bag and pour half of the marinade over them. Seal and shake to coat; refrigerate for at least 30 minutes.
  3. Preheat oven to 375°F.
  4. Sear the salmon: Heat olive oil in an oven-safe skillet over medium-high heat. Add salmon skin-side up; sear for 2-3 minutes until golden brown.
  5. Add peaches: Flip salmon skin-side down and add sliced peaches around it in the skillet.
  6. Pour on more marinade: Drizzle reserved marinade over salmon and peaches.
  7. Bake together: Transfer skillet to preheated oven; bake for about 12-15 minutes until salmon reaches an internal temperature of 145°F.
  8. Serve immediately: Garnish with fresh parsley if desired.
