  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.

  3. Heat olive oil in a skillet over medium heat and cook chicken until golden brown on both sides (about 5-7 minutes each side). Let rest before slicing.
  4. In a bowl, mix diced tomatoes, minced garlic, basil, balsamic vinegar, olive oil, and salt.
  5. Toss cooked pasta with any drippings from the chicken in the skillet. Slice rested chicken and place on top of pasta before adding bruschetta topping.
  6. Serve warm with grated Parmesan cheese and optional garnishes.
