  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon butter flavoring
  • 1/2 cup butterscotch sauce
  • 1/4 cup cream soda
  • 8 oz. tub of cool whip

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of an 8-inch springform pan.
  2. In a separate bowl, beat softened cream cheese until smooth. Add sour cream and blend well. Gradually incorporate sugar.
  3. Beat in eggs one at a time, then stir in vanilla extract, butter flavoring, butterscotch sauce, cream soda, and butterscotch chips until fully combined.
  4. Pour the filling over the crust and smooth the top with a spatula. Bake for about 60 minutes or until edges are set with a slightly jiggly center.
  5. Cool in the oven with the door ajar for an hour before refrigerating for at least 4 hours or overnight.
  6. Top with cool whip before serving and drizzle with additional butterscotch sauce if desired.
