  • 1 head of garlic
  • 30 grams olive oil
  • 50 grams butter
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 2 egg yolks
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese
  • Garlic butter we made previously
  • 1 egg

Instructions

  1. Roast the garlic by drizzling it with olive oil, sprinkling with salt, wrapping in foil, and baking at 160°C (320°F) for about 2 hours.
  2. Prepare garlic butter by mixing roasted garlic with softened butter and parsley.
  3. In a bowl, combine warm milk, yeast, and honey; let it proof for 10 minutes.
  4. Mix all-purpose flour, bread flour, sugar, milk powder (if using), salt, egg yolks, and yeast mixture until well combined.
  5. Knead the dough for 15-20 minutes until smooth.
  6. Let the dough proof in a warm spot for about 1 hour and 30 minutes until doubled in size.
  7. Roll out the dough to about 1/4 cm thickness and spread garlic butter over it.
  8. Sprinkle mozzarella cheese on top, roll up tightly, cut into six pieces, and let them proof again for another 30 minutes.
  9. Bake at 175°C (350°F) for about 20-25 minutes or until golden brown.
