  • 8 ounces fresh mozzarella cheese
  • 2 large ripe tomatoes (or 1 can of diced tomatoes)
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Balsamic glaze (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté minced garlic in olive oil over medium heat until fragrant (about 1-2 minutes).
  3. In a greased baking dish, layer chicken breasts, followed by tomatoes and mozzarella slices. Top with chopped basil.
  4. Season with oregano, salt, and black pepper. Cover with foil and bake for about 30 minutes until chicken reaches an internal temperature of 165°F.
