Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 3 medium Granny Smith apples (peeled and diced)
  • 1 cup granulated sugar (divided)
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 2 tbsp lemon juice
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. Combine graham cracker crumbs, melted butter, 1/4 cup granulated sugar, and cinnamon in a bowl. Press this mixture into the prepared pan to form the crust.
  3. In another bowl, beat the softened cream cheese with the remaining sugar until smooth. Add eggs one at a time along with vanilla extract, mixing well after each addition. Pour over the crust.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg in a separate bowl before layering on top of the cheesecake filling.
  5. For the topping: Mix flour with brown sugar, cut in cold butter until crumbly, and sprinkle over apples.
  6. Bake for about 45 minutes or until set and golden on top. Allow to cool completely before cutting into bars.
