  • 12 oz spaghetti or linguine
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, heat olive oil or butter. Add sliced onions and cook slowly for 30-40 minutes until they are golden brown and caramelized.
  2. Stir in minced garlic, salt, pepper, and optional sugar; sauté for an additional 2-3 minutes until fragrant.
  3. Meanwhile, bring salted water to a boil in a pot and cook spaghetti or linguine according to package instructions. Reserve half a cup of pasta water before draining.
  4. Add drained pasta to the skillet with caramelized onions and mix well. Gradually incorporate reserved pasta water until you achieve a silky sauce consistency.
  5. Stir in grated Parmesan and balsamic vinegar if using. Serve garnished with fresh parsley.
