  • 12 oz spaghetti or linguine
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat. Add sliced onions and sprinkle with salt. Cook for about 10-15 minutes until soft and translucent.
  2. If using sugar, sprinkle it over the onions and lower the heat. Cook for an additional 25 minutes until they are golden brown, stirring frequently.
  3. Stir in minced garlic and cook for one more minute until fragrant.
  4. In a separate pot, bring salted water to boil and cook spaghetti or linguine until al dente. Reserve half a cup of pasta water before draining.
  5. Combine the drained pasta with the caramelized onion mixture in the skillet. Add reserved pasta water and Parmesan cheese; mix well.
  6. For extra depth of flavor, stir in balsamic vinegar if desired. Serve warm, garnished with chopped parsley.
