  • 2 large yellow onions, thinly sliced
  • 3 tablespoons olive oil or unsalted butter
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 12 oz spaghetti or linguine
  • ¼ cup grated Parmesan cheese
  • ½ cup reserved pasta water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat. Add sliced onions and a pinch of salt. Sauté gently, stirring occasionally for about 20-30 minutes until golden brown.
  2. Stir in minced garlic and cook briefly until fragrant.
  3. Meanwhile, boil salted water and cook pasta according to package instructions until al dente. Reserve half a cup of pasta water before draining.
  4. Combine cooked pasta with the onion mixture in the skillet. Add reserved pasta water and grated Parmesan. Toss well to create a creamy sauce.
  5. Garnish with fresh parsley before serving.
