  • 1 cup mascarpone cheese (room temperature)
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso (cooled)
  • 1 package (about 7 oz) ladyfinger cookies (savoiardi)
  • 1 ½ cups cherry preserves or cherry pie filling
  • Fresh cherries (for topping)

Instructions

  1. Whip heavy cream until soft peaks form. Gently fold in mascarpone, powdered sugar, and vanilla until smooth.
  2. In a shallow bowl, combine cooled espresso with almond extract (instead of liqueur).
  3. Briefly dip each ladyfinger into the espresso mixture and layer them in a dish.
  4. Spread half the whipped mascarpone mixture over the ladyfingers.
  5. Spoon half of the cherry preserves over the mascarpone layer.
  6. Repeat with another layer of dipped ladyfingers, remaining mascarpone, and cherry mixture.
  7. Cover and refrigerate for at least 6 hours or overnight.
  8. Dust with cocoa powder before serving and garnish with fresh cherries.
