  • 2 large boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 4 oz cream cheese
  • 1 cup shredded Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz uncooked pasta (elbow macaroni or preferred shape)
  • ½ cup shredded mozzarella cheese (optional)
  • Fresh parsley or basil for garnish

Instructions

  1. Place chicken breasts in the crockpot and season with garlic, Italian seasoning, salt, and pepper.
  2. Pour chicken broth over the chicken until fully covered.
  3. Cover and cook on low for 4–5 hours.
  4. Shred the cooked chicken using two forks and return it to the crockpot.
  5. Stir in cream cheese and Parmesan until melted and creamy.
  6. Add uncooked pasta, stir well, cover, and cook on high for 30–45 minutes until pasta is tender.
  7. Optionally top with mozzarella cheese during the last few minutes of cooking.
  8. Garnish with fresh herbs before serving.
