  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and thyme; cook for about 5-6 minutes per side until golden brown. Remove from skillet.
  3. Sauté garlic in the same skillet for about a minute. Add mushrooms and cook for around 5 minutes until softened; then stir in spinach until wilted.
  4. Add heavy cream and chicken broth to the skillet; simmer for about 3-4 minutes until slightly thickened.
  5. Place chicken in the baking dish and pour the creamy vegetable sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Serve warm garnished with fresh parsley if desired.
