  • 1 red onion, diced
  • 1 serrano pepper, finely diced
  • 1.5 pounds boneless, skinless chicken thighs, cut into pieces
  • 4 garlic cloves, minced
  • 2-inch piece fresh ginger, grated
  • 23 tablespoons curry powder
  • 1 can crushed tomatoes (14.5 oz)
  • 1.5 pounds sweet potatoes, cubed
  • 1 can full-fat coconut milk (13.5 oz)
  • 3 cups baby spinach

Instructions

  1. Heat the coconut oil in a large pan over medium heat. Add the onion and serrano pepper; sauté until the onion softens.
  2. Add chicken pieces and cook until browned.
  3. Stir in garlic, ginger, curry powder, and other spices; cook for about 2 minutes until fragrant.
  4. Pour in crushed tomatoes and add sweet potatoes followed by coconut milk; mix well.
  5. Bring to a gentle boil then reduce heat to simmer for about 15 minutes until sweet potatoes are tender.
  6. Stir in spinach until wilted; finish with lemon juice and cilantro before serving.
