  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons lemon juice (divided)
  • 1 teaspoon dried oregano
  • 1 garlic clove (minced)
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • Fresh vegetables (e.g., cherry tomatoes, cucumber, red onion)

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, oregano, minced garlic, salt, and pepper in a bowl. Coat the chicken in the marinade and refrigerate for at least 15 minutes.
  2. Heat olive oil in a skillet over medium heat and cook the marinated chicken for about 6-7 minutes per side until cooked through. Let rest before slicing.
  3. Prepare tzatziki by mixing Greek yogurt with grated cucumber (well-drained), olive oil, lemon juice, minced garlic, dill, salt, and pepper until smooth.
  4. Assemble bowls with cooked grains as a base followed by sliced chicken and your choice of chopped vegetables. Drizzle generously with tzatziki sauce.
