  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Add beaten eggs and knead until smooth.
  2. Gradually incorporate softened butter and knead until dense and slightly sticky.
  3. Cover the dough and let it rise in a warm place for about 2 hours, until doubled in size.
  4. Prepare the vanilla custard by heating milk with butter and vanilla pod. Whisk together egg yolks, sugar, cornstarch, and flour; then combine with hot milk mixture on heat until thickened.
  5. Roll out the risen dough, spread cooled custard, sprinkle chocolate chips, fold over, cut into rectangles, and let rise again for another 2 hours.
  6. Preheat oven to 350°F (180°C), brush risen brioches with egg wash, bake for 10-12 minutes until golden brown.
  7. Brush with sugar syrup while warm for a glossy finish.
