  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream for frosting
  • 8 oz cream cheese for frosting, softened
  • 1/2 cup powdered sugar for frosting
  • 1 teaspoon vanilla extract for frosting
  • 1 teaspoon coconut extract for frosting
  • 1 cup sweetened shredded coconut for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla and coconut extracts, then alternate adding dry ingredients and coconut milk until well combined.
  5. Pour the batter into prepared pans and bake for about 25–30 minutes or until golden brown. Allow cooling completely.
  6. For frosting, beat cream cheese with powdered sugar until smooth; then fold in whipped heavy cream.
  7. Once cakes are cooled, layer and frost generously with the creamy frosting. Press sweetened shredded coconut onto the sides and top of the cake.
