1 ½ cups graham cracker crumbs
2 tbsp granulated sugar
½ cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp coconut extract
8 oz Cool Whip, thawed (divided)
2 (3.4 oz) boxes of instant coconut cream pudding mix
3 cups half-and-half
1 cup sweetened shredded coconut, toasted
Instructions
Prepare the crust: Mix graham cracker crumbs and sugar in a bowl. Add melted butter and combine well. Press mixture into the bottom of a 9×13 inch dish.
Make the cream cheese layer: Beat cream cheese and powdered sugar until smooth. Stir in coconut extract; fold in half of the Cool Whip.
Prepare the pudding layer: Whisk pudding mix and half-and-half until thickened (about two minutes). Fold in remaining Cool Whip.
Assemble: Spread cream cheese mixture over crust, followed by pudding layer.
Chill: Cover with plastic wrap and refrigerate for at least six hours or overnight. Top with remaining Cool Whip and toasted coconut before serving.
