Coconut Cream Lush is the perfect no-bake dessert that combines creamy layers of coconut goodness with a crunchy crust, making it an ideal treat for any occasion.

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed (divided)
  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Prepare the crust: Mix graham cracker crumbs and sugar in a bowl. Add melted butter and combine well. Press mixture into the bottom of a 9×13 inch dish.
  2. Make the cream cheese layer: Beat cream cheese and powdered sugar until smooth. Stir in coconut extract; fold in half of the Cool Whip.
  3. Prepare the pudding layer: Whisk pudding mix and half-and-half until thickened (about two minutes). Fold in remaining Cool Whip.
  4. Assemble: Spread cream cheese mixture over crust, followed by pudding layer.
  5. Chill: Cover with plastic wrap and refrigerate for at least six hours or overnight. Top with remaining Cool Whip and toasted coconut before serving.
