  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped and toasted pecans
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Toast the pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant.
  3. In a large bowl, cream together the softened butter, white sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla extract, mixing well until combined.
  5. In another bowl, whisk together flour, salt, baking powder, and baking soda.
  6. Gradually mix the dry ingredients into the wet mixture until just combined.
  7. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips gently until incorporated.
  8. Chill the dough in the refrigerator for at least one hour.
  9. Scoop generous mounds of dough onto prepared baking sheets with enough space between them.
  10. Bake for 12–14 minutes until golden around the edges but still slightly shiny in the middle.
  11. Allow cookies to cool on the pan before transferring them to a wire rack.
