  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying (or cooking spray for baking)
  • Sweet chili sauce (for serving)

Instructions

  1. In a shallow bowl, whisk together flour, chili powder, salt, and pepper.
  2. In another bowl, whisk eggs with water.
  3. Set up three bowls: one with the flour mixture, one with egg wash, and the last with coconut flakes and panko breadcrumbs.
  4. Coat each chicken tender in flour, dip in the egg wash, then roll in coconut flakes followed by panko breadcrumbs.
  5. For frying: Heat oil in a skillet over medium heat and fry coated tenders for about 2-3 minutes on each side until golden brown. For baking: Preheat oven to 400°F (200°C), arrange on a parchment-lined sheet, spray lightly with cooking spray, and bake for 15-20 minutes until golden.
  6. Serve warm with sweet chili sauce.
