1 ½ cups canned or frozen sweet corn
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
½ cup all-purpose flour (gluten-free option available)
1 large egg
¼ cup breadcrumbs (panko recommended)
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
¼ teaspoon salt
⅛ teaspoon black pepper
Vegetable oil for frying
Instructions
If using canned corn, drain well; if using frozen corn, thaw and pat dry.
In a large bowl, whisk the egg until combined.
Add flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper to the bowl. Mix well.
Gently fold in the corn until evenly combined.
Shape the mixture into small balls or discs.
For frying: Heat vegetable oil in a pan over medium-high heat (350–375°F). Fry bites until golden brown (2-3 minutes per side). For baking: Preheat oven to 400°F and bake for 15–20 minutes on a parchment-lined sheet.
Drain excess oil if frying and serve warm with your favorite dipping sauce.
