  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup all-purpose flour (or gluten-free blend)
  • 1 large egg
  • ¼ cup breadcrumbs (panko recommended)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Vegetable oil for frying (or for baking)

Instructions

  1. If using canned corn, drain thoroughly; if using frozen corn, thaw and pat dry.
  2. In a mixing bowl, whisk the egg until combined.
  3. Add flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  4. Gently fold in the corn until evenly distributed.
  5. Shape the mixture into small balls or discs (about 20-25 bites).
  6. For frying: Heat oil in a pan to 350°F (175°C). Fry each side for about 2-3 minutes until golden brown.
  7. For baking: Preheat oven to 400°F (200°C) and bake for 15-20 minutes on a lined baking sheet.
  8. Drain excess oil if frying; serve warm.
