  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil carrot rounds in salted water for 10–12 minutes until fork-tender.
  3. Drain and allow cooling slightly. Place on a lined baking sheet and gently smash each round with the bottom of a glass.
  4. Drizzle olive oil over smashed carrots, then season with garlic powder, smoked paprika, salt, pepper, and sprinkle with Parmesan.
  5. Roast for 20–25 minutes, flipping halfway through until golden brown and crisp.
  6. Garnish with fresh parsley before serving.
