  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil carrot rounds in salted water for 10–12 minutes until fork-tender. Drain and let cool slightly.
  3. On the prepared baking sheet, smash each carrot round gently using the bottom of a glass.
  4. Drizzle with olive oil and season with garlic powder, smoked paprika, salt, pepper, and sprinkle with Parmesan cheese.
  5. Roast in the oven for 20–25 minutes until golden brown, flipping halfway through.
  6. Garnish with fresh parsley before serving.
