  • 140 g unsalted butter (cold)
  • 24 g white grape juice (optional)
  • 1 cup ice water
  • 113 g unsalted butter
  • 56 g bittersweet chocolate
  • 21 g dutch process cocoa powder
  • 1 tsp espresso powder
  • 1/2 tsp salt
  • 113 g whole milk
  • 200 g granulated sugar
  • 106 g dark brown sugar
  • 25 g cornmeal
  • 4 eggs (room temp)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the pie crust by combining all-purpose flour and salt in a bowl. Cut in cold unsalted butter until crumbly. Add white grape juice and ice water, mixing until dough forms. Chill while preparing filling.
  2. Melt unsalted butter and bittersweet chocolate in a saucepan over low heat until smooth.
  3. In another bowl, whisk together cocoa powder, espresso powder, salt, milk, granulated sugar, dark brown sugar, cornmeal, eggs, and vanilla extract. Combine with melted chocolate mixture.
  4. Preheat oven to 350°F (175°C). Roll out chilled pie crust into a dish and pour in the filling. Bake for approximately 90 minutes until set but slightly jiggly in the center.
  5. Cool completely before slicing and serve with optional toppings.
