  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tbsp Flour + 3 tbsp Water (for béchamel)
  • Fresh Parsley (chopped)

Instructions

  1. Sauté thinly sliced onions in olive oil over medium heat for 30–40 minutes until golden brown.
  2. Add beef broth if onions stick; simmer for an additional 10 minutes.
  3. In the same skillet, make béchamel by whisking flour into melted butter, then gradually adding heavy cream until thickened.
  4. Stir in two-thirds of the caramelized onions and season with parsley and cheese.
  5. Cook cavatappi macaroni until just shy of al dente; drain and combine with the béchamel sauce.
  6. Transfer to a baking dish, top with remaining onions and breadcrumbs, and bake at 350°F (175°C) for 10–15 minutes until golden.
