  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup beef broth
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp flour + 3 tbsp water
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tsp Sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. Thinly slice onions and sauté in olive oil over medium heat for 30–40 minutes until caramelized. Add sugar to enhance sweetness if desired.
  2. Stir in beef broth and simmer for an additional 10 minutes.
  3. In another pan, create a béchamel by melting butter and whisking in flour before gradually adding heavy cream until thickened.
  4. Combine two-thirds of the caramelized onions with the béchamel sauce; season with salt, pepper, parsley, and Parmesan cheese.
  5. Cook cavatappi macaroni until just under al dente; drain and mix with the sauce.
  6. Transfer to a baking dish; top with remaining onions and breadcrumbs.
  7. Bake at 350°F (175°C) for 10–15 minutes until golden brown.
  8. Serve warm.
