  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1/2 Baguette (for topping)
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tbsp Flour + 3 tbsp water (for béchamel sauce)
  • 1 tsp Sugar
  • 2 tsp Salt
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg
  • Fresh Parsley (chopped)

Instructions

  1. Prepare the Onions: Thinly slice onions. Sauté in olive oil over medium heat for 30–40 minutes until caramelized.
  2. Make the Béchamel Sauce: In the same skillet, whisk flour into melted butter, then gradually stir in heavy cream until smooth.
  3. Combine: Add two-thirds of the caramelized onions to the béchamel sauce, seasoning with salt, pepper, parsley, and Parmesan.
  4. Cook Pasta: Boil salted water and cook cavatappi until al dente; drain and mix with the béchamel sauce.
  5. Assemble: Transfer pasta to a baking dish, top with remaining onions and breadcrumbs.
  6. Bake: Cook at 350°F (175°C) for 10–15 minutes until golden brown.
  7. Serve hot!
