  • 1/4 cup soy sauce or coconut aminos
  • 1/4 cup pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 cup cooked jasmine rice
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup toasted coconut flakes (for garnish)
  • 1/2 cup diced fresh pineapple
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a small bowl, mix together garlic powder, onion powder, paprika, black pepper, and salt. Rub this mixture over the chicken breasts.
  3. Heat olive oil in a large skillet over medium heat; cook chicken for 6-7 minutes on each side until golden brown.
  4. In another bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, and grated ginger.
  5. After removing the chicken from the skillet, pour in the sauce and bring it to a simmer.
