  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1 can (20 oz) pineapple chunks, drained (reserve juice)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, marinate chicken pieces with soy sauce, olive oil, honey (or brown sugar), garlic, ginger, paprika, salt, and pepper for 10–15 minutes.
  3. On a sheet pan, arrange bell peppers, onion wedges, and pineapple chunks.
  4. Layer marinated chicken on top and pour any leftover marinade over everything.
  5. Bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (74°C), stirring halfway through.
  6. Allow to rest before garnishing with fresh cilantro and serving over rice or quinoa.
