  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for the base)
  • 1 cup chocolate chips (for the topping)

Instructions

  1. In a large bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined. Gently fold in chocolate chips.
  2. Line a cutting board or plate with parchment paper and transfer the mixture onto it. Press down firmly to flatten to about 1/2-inch thick.
  3. In a microwave-safe bowl, melt chocolate chips with coconut oil in intervals until smooth.
  4. Pour melted chocolate over the cookie dough base and spread evenly. Optionally sprinkle with flaky sea salt.
  5. Chill in the freezer for about 10 minutes until firm. Cut into pieces and enjoy!
