  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)
  • Flaky sea salt, optional

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until smooth and fold in chocolate chips.
  2. Line a cutting board with parchment paper and spread the cookie dough mixture evenly to about ½ inch thick.
  3. Melt chocolate chips with coconut oil in the microwave in 30-second intervals until smooth.
  4. Pour melted chocolate over the cookie dough layer and spread evenly. Sprinkle flaky sea salt if desired.
  5. Freeze for 10 minutes until set. Cut into chunks and enjoy!
