  • 2 cloves garlic (minced)
  • ½ cup plain Greek yogurt
  • 1½ cups shredded sharp cheddar cheese (divided)

  • ¼ tsp black pepper
  • Optional: ¼ tsp paprika or dried thyme

Instructions

  1. Preheat oven to 400°F (205°C). Halve the spaghetti squash lengthwise, scoop out seeds, brush cut sides with olive oil, and place face-down on a baking sheet. Roast for 35–40 minutes until tender.
  2. In a skillet over medium heat, sauté onions in olive oil until soft. Add minced garlic for the last minute of cooking.
  3. Once the squash cools slightly, use a fork to shred it into strands.
  4. Combine shredded squash with sautéed onions, garlic, Greek yogurt, 1 cup cheese, salt, and pepper in a bowl.
  5. Transfer the mixture to a greased casserole dish, top with remaining cheese, and bake at 375°F for 20–25 minutes until golden and bubbly.
  6. Let cool slightly before serving.
