Ingredients

Scale
  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter (or olive oil)
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh herbs: parsley, chives, thyme
  • Salt and pepper to taste

Instructions

  1. Peel and cube the potatoes into uniform pieces. Rinse under cold water to remove excess starch.
  2. In a large pot over medium heat, melt butter or olive oil. Add onion and sauté until softened.
  3. Stir in minced garlic for about a minute. Sprinkle flour over the mixture to create a roux.
  4. Gradually whisk in the broth while scraping the bottom of the pot. Bring to a gentle simmer.
  5. Add potato cubes; cover and cook on medium-low heat for 15-20 minutes until tender.
  6. Carefully blend half of the soup until smooth, then return it to the pot.
  7. Lower heat; stir in milk and cream if using along with fresh herbs.
  8. Remove from heat and gradually add shredded cheddar cheese until melted.
  9. Season with salt, pepper, and optional spices before serving.
