  • 1 packet taco seasoning
  • 6 medium flour tortillas
  • 1 can refried beans (16 oz)
  • 1 can red enchilada sauce (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • Fresh toppings: diced Roma tomato, green onion, sliced black olives

Instructions

  1. Preheat oven to 375°F. Lightly spray baking sheets and arrange three tortillas on each.
  2. Bake tortillas for 3-5 minutes until golden and crispy; set aside.
  3. In a skillet over medium-high heat, brown the ground beef. Drain excess grease, then add taco seasoning and water. Simmer for about 10 minutes.
  4. Warm refried beans in the microwave for 1-2 minutes.
  5. Assemble pizzas by spreading a layer of beans on a tortilla, followed by ground beef and another tortilla. Repeat layers.
  6. Top with red enchilada sauce, cheese, and fresh toppings.
  7. Bake assembled pizzas for another 5 minutes until cheese is melted.
