  • 1/4 cup unsalted sweet cream butter (softened)
  • 1/2 cup smooth peanut butter (for filling)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon pure vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour, baking soda, and salt.
  2. In another bowl, cream softened butter and brown sugar until fluffy. Add peanut butter, egg (or flaxseed mixture), and vanilla; mix well.
  3. Combine dry and wet ingredients until just mixed. Roll tablespoon-sized balls of dough, coat in sugar, and flatten with a fork.
  4. Bake for about 10 minutes until golden at the edges. Cool on wire racks.
  5. For the filling, beat together softened butter and peanut butter; gradually add powdered sugar and milk until smooth. Assemble cookies by spreading filling between two halves.
