  • 8 slices rye bread
  • 2 cups thinly sliced or shredded corned beef (substitute turkey or tempeh if desired)
  • 2 cups shredded Swiss cheese (or provolone/cheddar)
  • 1 1/2 cups drained sauerkraut
  • 1 cup Thousand Island or Russian dressing
  • 2 tablespoons butter (for greasing)
  • 1 teaspoon garlic powder
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. Cut the rye bread into cubes or slices and layer half of it in the bottom of the greased dish.
  3. Add half of the corned beef, followed by half of the Swiss cheese, half of the sauerkraut, and half of the dressing. Repeat with the remaining ingredients.
  4. Cover the dish with aluminum foil and bake for 20-25 minutes. Remove foil to brown the top during the last few minutes.
  5. Let it rest for 5-10 minutes before slicing and serving.
