Ingredients

Scale
  • 1 (15.25 ounce) box Devil's Food cake mix
  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 (7 ounce) jar vegan marshmallows crème
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a large bowl, combine Devil's Food cake mix, eggs, and oil until a soft dough forms.
  3. Use a medium scoop to drop dollops of dough onto the prepared sheets, spacing them about 2 inches apart.
  4. Bake for 8-10 minutes until edges are set; let cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  5. Beat softened butter in a bowl until creamy; then add powdered sugar, vanilla extract, and salt for the frosting mixture.
  6. Fold in vegan marshmallows crème and reserve half a cup for piping later.
  7. Microwave heavy cream over chocolate chips for about 45 seconds; whisk until smooth to prepare the ganache.
  8. Frost each cooled cookie generously with frosting; chill in the fridge for about 10 minutes.
  9. Drizzle ganache over each cookie once chilled; pipe reserved frosting into squiggle patterns on top.
